Ci sono posti incontaminati nelle periferie dell’ Europa che i governi centrali hanno abbandonato per anni e dove la Comunità Europea avrà anche portato dei vantaggi, ma a furia di abbinare il suo nome a divieti e regole del tipo quel-che-avete-fatto-fino-adesso—era-sbagliato-ed-ora-non-lo-fate-più, si è conquistata più nemici degli ausiliari del traffico. Voglio dire, chi sei tu per decidere addirittura cosa devo mangiare? La Sardegna è sicuramente uno di questi posti. E Su Gallu è una di quelle usanze culinarie che, da un giorno all’altro, sono diventate più illegali dell’eroina. Chi ci convive da una vita, non sembra farci caso più di tanto. Ecco cosa ci ha detto Gavino, quando il nostro amico Ivano è andato a trovarlo nella sua rudimentale fattoria, sui monti sopra a Is Aios dove lui vive da anni in pace ed armonia con le sue bestie preferite. Vice: Ci spieghi cos’è esattamente Su Gallu? Gavino: Su Gallu è una specie di formaggio all’ennesima potenza. E’ semplicemente lo stomaco del capretto appena nato e messo a stagionare. Scusa? Si, lo stomaco del capretto. Quando uccidiamo un capretto, cerchiamo di non buttare via niente. Lo stomaco è naturalmente pieno di latte della mamma. Lo si prende, si chiudono i budelli e lo si appende aspettando che il latte contenuto solidifichi fino a formare una crema. E quanto deve stare a stagionare? Almeno un paio di mesi. E’ molto importante che il capretto non abbia più di un mese e mezzo, altrimenti rischi che la bestia non abbia dentro di se abbastanza latte della mamma. Più latte c’è, meglio viene. E poi, come si mangia? Si mangia come un semplice formaggio. Si mette a tavola tutto intero e si apre con un coltello. Sembra un formaggio, lo stomaco funge da crosta. Ha un sapore e un odore molto forti. Capita spesso che le donne o i turisti si debbano alzare da tavola quando lo apriamo. Prima che diventasse illegale lo si trovava nei negozi? Non lo so. Io son sempre stato qui su. E la gente è sempre venuta qui a comprarselo. Non sapevo neanche fosse illegale. A noi non interessano queste cose: ci piace e lo mangiamo. Male non fa. REDAZIONE VICE |
